Breakfast Burrito

If you think you don’t have time for breakfast, try this fast and easy breakfast burrito recipe. You’ll start the day off right with some good quality protein and a healthy serving of vegetables! Frozen veggies are suggested to save time in this recipe, but you can opt for fresh if you have time to chop.

  • 1 tablespoon olive oil
  • 2 eggs
  • 1/2 cup frozen vegetables
  • 1 whole wheat tortilla
  • 1-2 tablespoons salsa
  • 1 Tablespoon parmesan cheese
  1. Heat olive oil in a saute pan. Crack eggs into a bowl and whip gently with a fork.
  2. Add frozen vegetables to the oil and saute until thawed. Add eggs to the pan, lifting and turning with a spatula until eggs are completely cooked and veggies are soft.
  3. Spoon cooked egg mixture into the center of the whole wheat tortilla.
  4. Add salsa and cheese and roll tortilla like a burrito.
