Ingredients
- 1 tablespoon olive oil
- 2 eggs
- 1/2 cup frozen vegetables
- 1 whole wheat tortilla
- 1-2 tablespoons salsa
- 1 Tablespoon parmesan cheese
Instructions

Heat olive oil in a saute pan. Crack eggs into a bowl and whip gently with a fork.

Add frozen vegetables to the oil and saute until thawed. Add eggs to the pan, lifting and turning with a spatula until eggs are completely cooked and veggies are soft.

Spoon cooked egg mixture into the center of the whole wheat tortilla.

Add salsa and cheese and roll tortilla like a burrito.
