This is one of the easiest desserts you’ll ever make, and it’s a crowd pleaser every time! Use good quality Greek yogurt and your guests won’t even know that they’re eating a “healthy” dessert. If berries are out of season, go for frozen berries and let them thaw before assembling the parfait.
- 1½ cups pecans
- 1 vanilla bean split and seeds scraped out
- 1 teaspoon cinnamon
- ½ teaspoon sea salt
- ½ cup pitted dates
- 16 ounces Greek yogurt
- 2 cups fresh or frozen blueberries
In food processor, combine pecans, vanilla bean scraping, cinnamon, sea salt and dates.
Chop to a medium to coarse texture.
In parfait-style glass, layer yogurt, blueberries and pecan/date mixture.
Chill and serve.
