Blueberry Yogurt Parfait

This is one of the easiest desserts you’ll ever make, and it’s a crowd pleaser every time! Use good quality Greek yogurt and your guests won’t even know that they’re eating a “healthy” dessert. If berries are out of season, go for frozen berries and let them thaw before assembling the parfait.

Ingredients
  • cups pecans
  • 1 vanilla bean split and seeds scraped out
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • ½ cup pitted dates
  • 16 ounces Greek yogurt
  • 2 cups fresh or frozen blueberries
Instructions
  1. In food processor, combine pecans, vanilla bean scraping, cinnamon, sea salt and dates.
  2. Chop to a medium to coarse texture.
  3. In parfait-style glass, layer yogurt, blueberries and pecan/date mixture.
  4. Chill and serve.
