Avocado Spinach Dip

If you love guacamole, you’ll love this dip! Adding spinach is a great way to get more greens into your diet, and you won’t even notice it’s in there. This works great as a veggie dip or topping. If you want to spice it up, add some peppers or pepper flakes. And instead of using tortilla chips for dipping, try sweet red peppers, cucumbers, or jicama.

Ingredients
  • 1 large avocado
  • 2 cups spinach
  • ½ cup pitted Kalamata olives
  • 1 clove garlic chopped
  • ¼ cup olive oil
  • Juice from ½ lemon
  • 1 teaspoon cumin
  • 1 teaspoon sea salt
Instructions
  1. Slice avocado lengthwise and remove the pit. Scoop avocado into food processor. Add spinach, olives, garlic and olive oil and blend. Additional olive oil can be added for a smoother texture. Add lemon juice, cumin and sea salt and blend until smooth.
  2. Serve with carrots, English cucumber, cauliflower, jicama, red peppers or any other vegetables of your choice.
