Massaged Kale Salad with Shredded Beets and Carrots

Ingredients
  • 2 bunches kale de-stemmed and coarsely chopped
  • 1 avocado pit removed
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • 2 tablespoons balsamic vinegar
  • ¼ cup pine nuts toasted
  • 2 beets skin on, scrubbed and shredded
  • 4 carrots shredded
Instructions
  1. Place the kale in a large bowl. Scoop the avocado into the bowl and add olive oil and sea salt. Use both hands to massage the avocado and olive oil into the kale. The kale will start to take on a wilted appearance, which means you're doing it right. Drizzle in balsamic vinegar.
  2. Add the toasted pine nuts, beets, and carrots. Toss and serve.
