Massaged Kale Salad with Shredded Beets and Carrots

Ingredients
2bunches kalede-stemmed and coarsely chopped
1avocadopit removed
1tablespoonextra virgin olive oil
½teaspoonsea salt
2tablespoonsbalsamic vinegar
¼cuppine nutstoasted
2beetsskin on, scrubbed and shredded
4carrotsshredded
Instructions
Place the kale in a large bowl. Scoop the avocado into the bowl and add olive oil and sea salt. Use both hands to massage the avocado and olive oil into the kale. The kale will start to take on a wilted appearance, which means you're doing it right. Drizzle in balsamic vinegar.
Add the toasted pine nuts, beets, and carrots. Toss and serve.
